So named for its white mottled appearance, a class of
seaweed, leopard weed stores large amounts of starch in its fronds. This can be extracted by simply shredding and washing the fronds, the starch granules then bead at the surface of the washing vat. Skimmed off and dried to a white powder, boiling breaks apart the powder of starch granules. In this manner starch is used either to stiffen cloths, or refined and used as a thickening agent in foods.
