Imperia Fish Factory
Once there was an adequate steady supply of fresh fish for the population of Imperia, the remainder was processed at the Imperia Fish Factory. The best fish were sold fresh, the remainder were processed. There the fish were washed, scaled, gutted and filleted. The fish fillets were either salted and dried or else pickled in brine or vinegar for sale to travellers, ships or for shipment to other cities. A limited supply of top grade herring was pickled in brandy for sale to those who could afford to enjoy the best. Fish Roe was collected, salted and processed as Caviar, then sold to the wealthy in Imperia or abroad.
The waste products were not wasted. They were dried, ground into a powder and bagged for sale as fertilizer. Nothing was thrown out.
All fish brought to the Imperia Fish Factory by Fishermen were purchased. Of course if the supply was too big, the offered price dropped, thus supply and demand controlled the industry.
